Brisket

Brisket is a beef cut taken from the breast section of the cow beneath the first five ribs, behind the foreshank. Consequently, brisket can be a large cut of meat in whole. We generally cut our Brisket into 4 equal parts that end up being 3lbs – 6lbs each. Brisket is best when it is cooked low and slow. You can make corned beef, pastrami, and pho from Brisket. It is also very commonly smoked.
